Dressed Salmon

Dressed salmon makes a stunning centrepiece for your buffet. We use fresh salmon sourced in the Shetland Isles and other locations in Scotland. A whole salmon is gently poached with parsley and lemon and lightly seasoned. The skin is carefully removed from one side and the exposed flesh is decorated with thinly sliced cucumber dipped in aspic (alternative styles of decoration can be applied according to your taste). The salmon is presented on a disposable tray surrounded by crayfish and prawns. For smaller groups of guests, a salmon fillet can be dressed in the same way.

We can also poach and dress salmon that you yourself have caught
We can dress locally caught wild salmon if requested.

Size guidelines -
Salmon fillet: 1 - 2 kilograms
Whole salmon: 3 - 6 kilograms
